update 
 after a flying visit  from  Geoff and Errol  on their way through  a comp  test and replacement of choke shaft seals which were rather stiff and seemingly letting air slip through thus popping and farting reassembled  and warmed up  the  malaise has gone and the engine  feels powerful again needs to go on a long run

as has been said the carbs stripped down to cast body, ultra and hand cleaned, all fuel and air ventura,s checked for clearance, floats checked for fuel, all seals and shaft rubbers replaced, everything except the slide and butterfly and shaft is brand new,
balanced and colour tuned before a 360 klm road test on my bike to take them down to Tims, a very strong, smooth set of carbs,
                                     that,s not to say something was missed,, lets hope not

Tim if you have pressure coming from the engine through the vaccuum pipe to the taps, 1 other problem will be valve not shutting for what ever reason,
would it happen to be the right hand tap, running off #4 manifold, the pot that had the stripped pug in it at the rally, you may have a burnt seat, wouldn,t explain the wall and taking off again though

if you can buy a cheap compreesion tester, that will give you an idea of whats going on, or I can bring one down in a couple of weeks with the bike and spend a bit of time on it, will organise something

1 thing that may still affect the carbs, {it would be a big maybe} would be the choke dust covers we couldn,t get, but I now have, can replace them and pull the bottoms off to check internals and jets if can have the carbs removed when we roll through,

Have you had vacuum gauges on it? If so what did they say?

I did notice the one was being sucked down  while the other one was trying to inflate

leaking inlet valve?

if only it were the case  Geoff disassembled the carbs ultra cleaned them replaced nearly every serviceable part in them  theres a video  dedicated to it
on a side note after replacing the fuel taps and putting plugs on the vaccum line spigot on the manifold I did notice the one was being sucked down  while the other one was trying to inflate this doesn't seem right if they are vaccum  lines

Mmmmmm....fuel tap issues and carb/ running problems.
Runs fine on start up then...falters.
Choke cct problems...and or float issues...
Check the floats don t have fuel inside of them .
Submerse them and look for bubbles/ air leaks.

Tim, sounds to me that your carbies still have blockages somewhere .
Don't know if you have gone thoroughly through them but I had the same problem a few years back, if you can get them ultra sound cleaned it might help.
I only solved my prob with a different set of carbs because mine had been fiddiled with by X amount of po's and with no id on them it was impossible to know what jets they needed.

update
went round on a general tighten and fiddle test  took it for a run the coughing and farting has gone  now it hits the wall at 4 k  settles then takes off   any one have a work round for a similar prob

Tim, have you checked that the fuel tank vent isn't clogged?

put the new fuel taps on  fiddled round making sure there s no kinks or odd angles in the fuel lines  fired her up ran well for a while idled nicely    then went back to its  coughing and farting    :(

if playing up, the xs11 vac-taps are extremely easy to fix, tho' of
 course the  clueless yanks on the .com site run them without even stripping them for 25 years then complain they're 'trouble' and replace with nasty chinese crank-on/crank-off type..

those original xs11 vac-taps are luxury, the best fuel taps available'  they'd be about a thousand bucks each if new today.. full-auto,  hoho you never have to think or ever lift a finger, it's all done
 the common-as-muck chintzy on/off manual stuff are for lesser bikes ...

doesn,t look like they,re vaccuum so the off mod might be a good tip, the picture shows them on a 24 ltr tank so the bolt centres must be right
