Welcome to the forum and the XS will always get going.
Just a few of the XS's from Aus at a VJMC Rally in Bendigo, I doubt Kiwi would be able to ride those distances :-)
One end of NZ to the other is really just a coffee run.

There's only three people in the southern hemisphere who ride XS1100's
now and pretty much everyone on the aussie site have either died or
are in wheelchairs or best scenario shuffling around on walkers. 
I'm a kiwi and we're a lot tougher breed down here, so I'm likely the only
reply you'll get ..  As for the "no hope" to fix bike if you can move
the pistons with a kick-lever then she'll be a runner mate..

Wow ... not many new joins here since what? 2020. :o Anywho .. I am a German native but have been living in the US since 1990 ... I have been an XS1100 enthusiast since my dad bought the 41st XS1100 built (built date 9/77) in April 1978, VIN 2H9-000142. I rode a GT750 back then and remember it like yesterday when my dad asked me to come along ... I jumped in the car not knowing where'd we go ... and off we went arriving at Detlev Louis a well known Hamburg MC shop. They presented my dad with his new 2H9 XS1100 and he rode it home. Price was 7,900 Deutsche Mark. My dad stopped riding in 1983 and I eventually took the XS over. When I moved to the US it got parket and never moved again. My dad stored it in the barn and did not want to keep it up or sell it. He passed away in 2020 and I inherited the bike, but there is little I can do with it from here. It has only 18500 km on the odo, but is in rather poor shape. It has not run since 85 either. Now for my life in the US. XS standards are very rare in the US. Almost everyone bought the Special back then. I have been looking for a standard in good shape and an acceptable price for years and finally found one. 79 F model with only 9100 miles. beginning to iron out the bugs and make her better. Earlier in the year the idea of a meet up weekend for the XS11 crew at Walcha, NSW was mooted. ( https://www.visitnsw.com/.../country.../armidale-area/walcha )
This has grown legs recently and interest is sought for the weekend January 12th to 15th.
Talking about pub/motel/caravan park stay, get together, maybe do the Oxley Highway  and/or Thunderbolts Way, or just hang out and chat.
There is a nice motorcycle museum an Nabiac (near the eastern end of Thunderbolts Way) as a possibility for a day ride.
I have stayed at the Commercial Hotel a few times in the past but there are other pubs, motel, and caravan park available. I will make inquiries as to beds, and availability and costings.
